Making Alternative Proteins Taste Like the Real Thing
Givaudan, the world’s largest company in the flavour and fragrance industries, is tapping into the growing global interest in alternative proteins. “Everyone wants in, whether it’s some defense or a desire to disrupt,” Louie D’Amico, president of Givaudan’s flavor division, told Bloomberg Businessweek.
The Swiss company has teamed with up Israeli startup InnovoPro to study chickpeas as a base for products such as vegan mayonnaise, puddings, and ice creams.
